Easy Breakfast - Potato Nest Eggs

For all of you with backyard chickens, you will soon find yourself with an abundance of eggs. We are always in search of new recipes to try, and if they happen to be easy and take up some of our eggs, Thank Goodness!

Today, we will be cooking potato nest eggs. They are very easy and only take 1 pan.

What you will need:

- a muffin tin

- 1 package shredded hash browns

- 1 package sharp cheddar cheese

- 1 egg per muffin hole (the bantam eggs work really well for this)

- salt

-pepper

- rosemary (I like to use the fresh from my herb garden)

- baking spray

Instructions:

To start, preheat oven to 400 degrees.

Spray your baking sheet with the baking spray.

Insert the hash browns into the muffin tin until you have a thin layer over the entire pan. You can press these into the pan to make sure you get complete coverage in the cup. Leave a little dip in the middle, this is where the egg and cheese will go later.

Bake for 10 mins or until the hash browns are slightly brown.

Next, sprinkle the cheese over the potatoes with a little salt and pepper. You should see the cheese starting to melt.

After this, crack 1 egg into each muffin cup. The egg should sit nicely into the divot left in the potatoes.

Bake for an additional 10 minutes.

Sprinkle with a little rosemary and some salt and pepper and viola!
