Potatoes
The potato plants are growing really well. We were able to get the irrigation system most of the way hooked up, so now I don't have to spend a hour and a half watering things.
In New Mexico, the soil dries out really fast, so we did a layer of mulch on top to help hold in the moisture. The mulch was made from bark left over from chopping wood in the winter. This seems to have helped, because they are doing great!
They are growing wonderfully and in a few weeks we will be able to start harvesting our New potatoes (the small round potatoes, great for boiling or mashing) about 50 days post planting. Once the tops die, we will be able to dig up our full harvest in the fall.
